This wine is apparently "foxy",
according to a Melbourne wine shop operator. I made my first wine 1999 from
these vines.

April 4 EC1118 wine yeast with
2.5
tspn yeast nutrient, 2.5
tspn tannic acid 2.5
tspn ascorbic acid, 2.5
tspn tartaric acid, 2.5
tspn malic acid
April 5 No go, put stronger
General Purpose Wine yeast in next day with some juice.
Not sure, did not go off, could see a rise in the skins
April 6 Going off. Indeed! Looks
like at least 12-14 liters, depending on the pressings. Bought a new barrel 30l
to handle this, was going to get a 60l, glad I didn’t!
May 23 Racked and splashed to rid
the smell of sulphides to Oak barrel as much as possible. One and a half bottles
finished the half off tonight!
Still stinks.
tastes rather
dry, but okay, sharp like a flat
champagne !

1.5 tspns ascorbic acid
1.5 tspns tartaric acid

1.5 tspns speedase
3 crushed Camden tablets
made up to 10 litres warm water
wait for Saturday sg 1.104
Took a day to start off
31 Dec. 01 Racked off to 10 litre
Have to put pebbles in. 1.21 sg
4 Feb
Racked off all Glass
Tastes fine!
April 12 Bottled 8 with one
to rack again…

just tried sprinkling the
Burgundy Yeast wine yeast on, went off by the next
evening

Racked off and pressed lees
Beautiful.
Racked all after minor sieving to oak barrel, about 14 liters.
Tuesday
Tasted okay, gritty, smell of sulphur
again…type of yeast?
23 May
Nearly finished 2nd
fermentation.
Racked off oak barrel to 10 litre
and 1-3/4 bottles.
Tastes rather good, to me!
Less than 11% so far, will
wait another few weeks and maybe add the campden tablets.
